Prepare the Crust: Mix graham cracker crumbs, sugar, and butter in a bowl until combined. Press the mixture evenly into the bottom and sides of a 9-inch pie pan. Bake for 10 minutes, then let cool completely.
Make the Filling: In an electric mixer fitted with a paddle attachment, beat egg yolks and sugar on high speed for 5 minutes until thick and pale. Reduce speed to medium, add condensed milk, lime zest, and lime juice, and mix until smooth. Pour the filling into the cooled crust and freeze.

Decorate the Pie: In a clean mixer bowl with a whisk attachment, beat heavy cream on high speed until soft peaks form. Add sugar and vanilla, then beat until firm peaks form. Spoon or pipe the whipped cream onto the frozen pie and garnish with lime slices or zest.
Freeze the pie for several hours or overnight to set before serving.
