Ice Cream Pie
Key Details
Level: Easy
Yield: 8 to 12 servings
Total Time: 3 hours 25 minutes (includes cooling and freezing)

Active Time: 20 minutes
Ingredients
Crust
Graham crackers (for crumbing)
Melted butter

Filling
Ice cream (any flavor, softened but still firm)
Chopped pecans (optional)
Chopped candies (optional, e.g., chocolate chips, toffee bits)
Directions

Make the crust: Preheat your oven to 350°F (175°C). Place graham crackers in a large zip-top plastic bag, seal it, and crush into fine crumbs using a rolling pin (or a food processor for quicker results). Transfer the crumbs to a bowl, stir in melted butter until fully combined, then press the mixture firmly into the bottom and up the sides of a pie plate. Bake for 5 minutes, then let cool completely on a wire rack.
Prepare the filling: In a large bowl, stir the softened ice cream until smooth (avoid over-mixing, as it should stay slightly frozen). Add chopped pecans and candies (if using) and fold until evenly distributed.
Assemble and freeze: Pour the filling into the cooled crust, using a spatula to smooth the top. Cover the pie tightly with plastic wrap or aluminum foil and freeze for at least 2 to 3 hours (or up to a week in advance—just ensure it’s well-sealed to prevent freezer burn).
Serve: To cut clean slices, run a knife under hot water and dry it first. Drizzle each slice with your favorite jarred caramel or hot fudge sauce before serving.
Customize Your Pie

Chocolate Mint Version: Swap the graham cracker crust for a chocolate cookie crust (like Oreo). Use mint chocolate chip ice cream and mix in chopped peppermint patties for a refreshing twist.
Endless Combinations: Experiment with any ice cream flavor and add-in! Try vanilla with rainbow sprinkles, rocky road with extra marshmallows, or strawberry with crushed pretzels for a sweet-savory balance.
